IMMMMMMMMMMMMM BACK!!!

So I havent posted in about a week becasue I have been so busy! I have been doing really well on my plan. I will go on Saturday to weigh in.

Tomorrow I will start posting my food journals again.

I will post my pounds lost on Saturday and my menu for the week.

1/19 post: WHAT I GAINED I POUND!!!!!!!!!!!!!!!!!!!!!!!!!!!

So I weighed in yesterday. The last time I wayed in was Saturday morning. Much to my surprise when I weighed in today I had gained 1 pound. WHAT!!!! I couldnt figure it out because I have been so good. My first thought was... I really should have just eated that cake!! However, I learned that your weight is very differant when you weigh in in the morning and in the evening.

Since I weighed in Saturday morning and weighed in again on Wednesday night I was not compairing apples to apples. Apparently your weight can be heavier by 2-3 pounds in the evening. WHEW!!

I will not be weighing in on Saturday because I have UIL in Tarkington. The next time I weigh in will be next Wednesday and I should have a more accurate result.

Along Came Polly Dance Scene.....

Samba..Ramba....Zumba....Oh My!!

Today was a great diet day! I followed my plan and I even turned away cake. Not just any kind, the kind with the really good think icing that is so yummy. I figured there will still be cake in the world after I loose the weight so I can have a bite then. This way of thinking is what gets me through the day lol.

This evening I went to Zumba at the YMCA. Zumba is the latest exercise craze that is basically Latin dance. Lets just say I looked like a hot Latin mess out on the gym floor. I seriously felt like the character Reuben in the movie Along Came Polly. If you have seen the movie you know exactly what I am talking about. Regardless of how I looked it was a lot of fun and I know I burned a ton of calories in that hour.

Tomorrow I weigh in. Hopefully I have lost something since Saturday.

Only time will tell :)

Creamy Taco Dressing

So as I was trying to figure out a healthy way to make taco salad I came up with this idea. I made creamy taco salad dressing.

I  used 4 tbs of fat free sour cream, dill, Tabasco, onion powder, cumin and  taco seasoning.I used a "pinch" of each.

I mixed it all in a bowl with a tbs of ff milk. OMG it was sooooooooooo yummy and it made a lot. Oh and it was only 50 calories. WHOO HOO!!!!

Blah..Blah..Blah 1/17

So today while most of the teachers I know were enjoying sleeping in I was at work sitting through an 8 hour in service....REALLY?!

I became a teacher to teach kids and I understand that I need to stay current with everything new but I really hate sitting in one place for 8 hours.

Anyways..... Diet wise today was good. I was a little off program because I had a healthy omelet at lunch instead of a MF meal. The omelet did include everything I can eat in my one lean and green and it was low in calories. I stayed under 1500 calories so I think I did okay.

I have really been paying attention to calories at restaurants since I started my program. I have come to a realization that I was eating over 3000 calories on most days. It is crazy to see how many calories these things really are. WOW!!!

Food Journal 1/17

Breakfast: MF hot chocolate 100
                coffee and creamer   44    

Snacks: MF Parm Cheese Puffs (2) 200
            100 Calorie snack

Lunch: Spinich, tomato, mushroom egg sub omlet 350

Dinner: healthy fried pork chops with brown rice, brown gravy, broc and cauliflower  550

Total Calories: 1444

Taco Salad, Honey mustard grilled chicken salad, and oven fried pork chops

These are my own throw together recipes:

I always have some sort of steamed vegetable with my meals if I am not eating salad.

Taco Salad

brown 1 pound ground turkey
sprinkle taco seasoning on turkey while browning

In salad:
Lettuce
Low fat cheddar cheese
Taco shell strips
salsa
browned seasoned turkey meat

Honey Mustard BBQ grilled chicken salad:

Grill chicken with Honey BBQ sauce and mix in salad.    DUH!

Oven fried pork chops:

Coat both sides of pork chops in this mixture:

2 eggs
1 cup bread crumbs
seasoning of choice

^I buy seasoned bread crumb. I like to use the Italian and Ranch flavors. They are VERY low in calories and very flavorful.

Bake on 350 for 20 minutes or until coating is flaky.

Weight Watcher's Mexican Meatloaf

This is an old Weight Watchers Recipe. I think around 1985. Don't remember where I got it, but it is our favorite meatloaf recipe and the only one we use. I do not have the nutritional values for it, but I will have the points and exchanges.
1 Cup Chopped Onions
1 Cup chopped bell peppers, various colors.
1 tsp garlic powder
1 pkt weight watchers instant beef broth (equals about 2 tsps)
1 lb extra lean ground beef
4 oz shredded low fat cheddar cheese
1/4 cup plain bread crumbs
1/2 cup salsa
1/4 cup fat free sour cream
2 tsp worchestorshire sauce
1 tsp chilli powder.

Mix all together well. Place in a 8 inch sqare pan. Bake at 375ºf for about 45 mins.
Makes 4 servings

Fat and Fiber exchanges 16 fat 1 1/4 fiber

Weight Watcher's Smothered Steak and Onions recipe


Smothered Steak and Onions

4 Points per serving

16 ounces ground 90% lean turkey or beef
1/4 teaspoon black pepper
1 3/4 cups (one 14 1/2 ounce can) beef broth -- divided, see recipe
6 tablespoons (1 1/2 ounce) dried fine bread crumbs
2 cups sliced onion
3 tablespoons all-purpose flour
"All the flavor of the real thing, but without the extra fat! If you've never lost your taste for this oh-so-good-but-not-so-good-for-you dish, here's the answer-- and it's a winner."

1. In a large bowl, combine meat, black pepper, 1/4 cup beef broth, and bread crumbs. Mix well with hands to combine. Using a 1//3 cup measure as a guide, form 6 patties. Place patties in a large skillet sprayed with butter-flavored cooking spray and brown on both sides. Layer onions evenly over browned patties. In a covered jar, combine remaining 1 1/2 cups beef broth and flour. Shake well to combine. Pour broth mixture evenly over onion. Lower heat. Cover and simmer 20 to 25 minutes. For each serving, place 1 patty on plate and evenly spoon onion sauce over top. Freezes well.
Yield: "6 servings"

I lost 4.5 ponds this week!

I weighed in today and I lost 4.5 pounds...YEAH!!!!!!!!!!!!!!!!!!!!!!!! I am very motivated now. My goal for next week is another 5 pounds. I was only going to do 3 but I will be working out 4 days next week and plan on drinking more water. I am also trying some of medifast's new food: Parmesan cheese puffs, chicken noodle soup and hot chocolate.

I ran out of time yesterday to post my blog. Allwas good yesterday. I will post my food journal in a bit.

I didnt get to workout yesterday because grades were due and I had to finish up...UGH I hate grading papers.

We had dinner at Outback and I feel as if I made good choices: 1/2 of a Ribeye, Ahi Tuna, and mashed potatoes.


I bought an extra side salad and I am going to use the other 1/2 of my ribeye to make a steak salad today.

Easy come, easy go?

Today I have really been pondering the saying "easy come, easy go". Really??? That obviously doesn't apply to weight! It seems like the weight came on overnight. I know it didn't but it takes forever to get off and its not as fun taking it off as it was putting it on.

Today was really busy at work so I had a really good diet day. No temptations.
